Lindores New Make Spirit Drink

1. What they say

In 2018 we released our very first New Make Spirit to the public and they sold out within weeks. We are now delighted to be selling our award winning Lindores New Make Spirit in 20cl and 5cl bottles for you to enjoy at home, and they are a must for anyone invested in the story of the Spiritual Home of Scotch whisky.

We are thrilled that our Lindores New Make Spirit was voted as the best in Scotland by the prestigious World Whiskies Awards 2020. A panel of renowned experts take part in extensive blind tastings of the finest spirits in order to determine the best whiskies available in the world, so for our young spirit to be awarded as the best in Scotland is a huge result.

New Make Spirit: We had been through four seasons of distillation at Lindores and had worked with the distillery to define our spirit. We had a direction, but the distillery decided to offer us up a new intriguing spirit instead. We went from nutty, to cereal, to malty, to pears, to fruity and to finally a spirit which combines all of these and more. There is also a sweetness and a spiciness with an incredible mouth feel.

What did we do to get to this final place?

We increased our fermentations to 114 hours to bring out that added tropical fruitiness. We stopped the wash still at first sign of frothing, let it rest and then slowly brought the heat back into the still. We ran the spirit during the cut on the spirit stills very, very slowly, and we also cut in high at 75-76% and came down to 66%. Interestingly at around 68-69% on the cut, the spirit has an amazing caramel and butterscotch nose with others picking up peaches and strawberries. The final spirit is robust, complex, and interesting and that’s exactly what we hoped it would be – Gary Haggart, Distillery Manager

4. What I say

Sampled as part of the #LindoresAbbey 2022 Tweet Tasting once again hosted by Steve @TheWhiskyWire. The last time I sampled Lindores New Make was at 73% from the heart of the cut. This time the distillate is at typical cask filling strength of 63.5%, slightly more palatable but still needing some water!

5. The Whiskyphiles tasting notes

  • Colour Gin clear (0/20) medium-fine tears and numerous legs.
  • Nose sweet, toffee, fruity, apple and zesty orange, hazelnut, shortcrust pastry, ovaltine, butterscotch, tinned peaches and pears.
  • Taste Medium-body, spirity, toffee, malty, cereal/straw, peach/pear/apple compote fruitiness, custard cream biscuits.
  • Finish Medium, fruity and warming.

6. Overall

Once again I’m impressed with the quality of Lindores new make with it’s lovely mixture of fruit and cereal and nutty aromas and flavours.
