What they say

100% malt spirit, triple distilled, bourbon cask matured and finished in cognac casks that have been racked in our bonded warehouse the Sea Cask Room, exposed to the bracing sea air on the shoreline of Lambay Island. Trinity Well water from Lambay is added at the final finish, making this whiskey as unique as the island itself!

  • AROMA: Malt, Green Fruits, Floral, Ripe Bananas
  • TASTE: Coconut, Malt, Dried Berries/Fruits
  • FINISH: Long Lasting Malt with Lingering Sweetness and Green Fruits

What I say

Single malt Irish whiskey bottled by Lambay, I hadn’t realised before sampling this was finished in Cognac casks (tasted blind). Like most Irish Whiskeyn (and US Bourbon) I have no idea where this came from.

My tasting notes:

  • Appearance: Dark amber gold (11/20), medium tears and medium legs.
  • Nose: Soft brown sugar, vanilla, green and ripe bananas, touch oily, fruit pastilles/gums, a touch of salt caramel, coconut sun cream.
  • Taste: Oily, coconut cream, malty cereal barley, soft brown/Muskovado sugar on bananas, vanilla custard, apple, pear, kiwi and tannic oak wood.
  • Finish: Medium, kiwi, pear, green banana and green coconut

Overall

A lovely dram, full of ‘green’ fruits, kiwi, banana and coconut, there are hints of tannic oak wood and woody sugars that along with some of these fruits may have developed from the Cognac cask finish?
