Calvados (French pronunciation: [kal.va.dos]) is an apple brandy from the Normandy region in France.
Based in the UK and with over 10 years experience visiting Normandy and surrounding regions we have developed a great appreciation of this Norman spirit which is so evident in the landscape of the region. From watching apple harvests to visiting Calvados producers from farms (la ferme) to ancient houses or Domaine’s (translates literally as ‘field of’) we have experienced the production of Calvados from start to finish.
With a history stretching back to the 1500’s the production of apples and pears to produce Cider and for distillation into Calvados is indelibly tied to the agriculture and environment or ‘terroir’ of the region. Traditional farm production uses the apple (and occasionally pear) orchards to shelter their herds of characteristic red and white Normande cattle which graze them. Production of milk & dairy products, especially cheese, supplement the seasonal fruit harvest, fermentation and distilling activities.
